Instructions:
  1. Grate cucumbers and squeeze out excess liquid using paper towels or a cheesecloth.

    • 2 tablespoons cornstarch

    • ½ cup water (for cornstarch mixture)


Instructions:
  1. Set the oven to 400°F and line two rimmed baking sheets with parchment paper or aluminum foil.

  2. In a bowl, combine 2 pounds of ground beef, 4 finely chopped green onions, 2 inches of grated fresh ginger (or 2 tablespoons ginger paste), and 6 minced garlic cloves. Season with kosher salt and pepper. Mix until just combined. Roll the mixture into tablespoon-sized balls and place them on one side of the prepared baking sheet.

  3. While the meatballs and broccoli bake, heat 1 tablespoon  oil in a large skillet over medium-high heat. Add 1 cup low-sodium soy sauce or coconut amino substitute, 1 cup brown sugar, 4 minced garlic cloves, 2 tablespoons minced ginger, ⅔ cup water, 1 tablespoon rice wine vinegar, and ½ teaspoon red pepper flakes. Stir and cook for about 10 minutes. Then, whisk together 2 tablespoons cornstarch with ½ cup water and add to the sauce. Continue cooking until the sauce thickens, then remove from heat.

  4. Add the baked meatballs to the skillet with the sauce, tossing to coat them evenly.

  5. Plate the meatballs over rice, topped with additional green onions and sesame seeds. Serve the roasted broccoli on the side.

    • ¾ cup ketchup

    • ¼ cup soy sauce (or coconut aminos)

  • Optional

    • Parchment paper or aluminum foil (for baking)


Instructions:
  1. Set the oven to 400°F and line two rimmed baking sheets with parchment paper or aluminum foil.

  2. In a small bowl, soak 1 cup of fresh breadcrumbs (or ¾ cup panko breadcrumbs) in ¾ cup milk until the milk is absorbed.

  3. In a large bowl, combine 2 lbs ground beef, the soaked breadcrumbs, 1 finely minced onion, 2 mixed eggs, 2 teaspoons salt, 1 teaspoon ground black pepper, and 1-2 teaspoons of your preferred dry herbs or spices.

  4. Shape the mixture into small, 1-tablespoon-sized meatballs and place them on the prepared baking sheets.

  5. Bake the meatballs in the preheated oven for 12-14 minutes. Ensure not to overcook them to keep them tender.

  6. While the meatballs bake, melt ½ tablespoon butter (or oil) in a medium pot or deep skillet over medium heat. Add 2-4 minced garlic cloves and cook for about 30 seconds, being careful not to burn the garlic.
